Al-Muftah.

 

Biryani is most loved in Pakistan, but if you are making the Arabic dish Al Muftah instead of traditional biryani this Eid, this dish is made with meat, rice, and many spices like cinnamon, cloves, cardamom, black pepper, saffron and Contains a little garlic. After adding boiled macaroni to the dish and garnishing it with a boiled egg, rest assured that if you make this dish, the diners will go crazy over your food.

Muftah composition.

·         Add water, onion, garlic, green chilies, coriander leaves, cardamom, cloves, cinnamon, and coriander on medium heat and boil the water. Add meat, saffron, garlic powder, red chili powder, mixed spices, and black pepper, and leave it on fire till the meat is cooked.

·         Season with salt and simmer for 10 minutes, then remove the meat from the broth and place in an oven tray. Place the tray in the oven at 300 degrees and leave until golden brown. Add a small amount of oil to a bowl, then place the bowl in a tray and cover the tray with foil.

·         Heat a piece of charcoal and drop it into the oil, then quickly cover the tray. Rice: Melt the ghee and fat over medium heat, then add the onion and stir. Add cardamom, cloves, cinnamon, salt, and pepper and stir well. Then add rice and meat broth stir and leave until boiling.

·         Reduce heat, cover, and leave until tender. Drain the saffron, then spread the saffron water over the rice. Add a small amount of oil to a bowl, then place the bowl in the middle of the rice and cover the saucepan.

·         Heat a piece of charcoal and drop it into the oil, then quickly cover the pot. Before serving, stir the rice to mix the colors. Pour the rice into a serving dish, then place the meat on top.

Al- Matazeez.

 

It is a popular dish in Saudi Arabia, particularly in the Najd region, consisting of flour bread, and meat. It is served with broth and vegetables and if you make this dish on Eid, it will also be enjoyed by the diners forever.

Matazeez composition.

·         Boil the meat with water, spices, and lomi (black lemon).

·         Get a large saucepan and add oil and onion.

·         After the onion has dissolved, add the tomatoes, then add the boiling water and spices.

·         Add the vegetables, and salt and bring the mixture to a boil on high heat.

·         While boiling, bring the nuts to a boil, and then drop them into the water one by one.

·         Then close the pot tightly and after some time start reducing the flame.

·         Once cooked, put it on a serving tray, and arrange the meat beautifully on top.

Al-Saleeg.

 

It is the famous and most important dish of the Hijaz and Taif regions. It is a rice pulao with dunbe meat, in which chicken can be used instead of dunbe. In addition to milk and tomato paste, cinnamon, chili, cardamom, coriander, and butter are added to it. This pulao made with mutton meat is amazing because of its deliciousness and aroma due to the spices. You must try this once on this Eid.

Saleeg composition.

·         Wash the rice well and soak it in water for about half an hour.

·         Wash the chicken well put it in a pot on the stove and cover the pot with water.

·         Add the onion and salt, then toss until the ingredients are smooth.

·         Skim the excess chicken foam from the surface of the pot, then add the cardamom, cinnamon, bay leaf, and three masti seeds.

·         Leave the pot on the heat for about 40 minutes until the ingredients are absorbed and the chicken is cooked, then drain the chicken stock and set aside.

·         Remove the soaked rice from the water, then place it in a pot on the stove.

·         Add three cups of chicken broth to the rice, stir the ingredients, then leave it until it is cooked and the broth is well absorbed.

·         Add the milk to the rice and leave until the milk is well absorbed and boiled.

·         Put the chicken in an oven tray and then place it in a preheated oven at 180 degrees Celsius for about 20 minutes until it is cooked and browned.

·         Add the ghee and the remaining mastic to the pot on the fire, then stir the ingredients well until the mastic dissolves.

·       Place the boiled chicken in a serving dish and place the chicken on top of the dish, then pour the ghee on top.

Al-Jareesh.

It is a popular dish in Saudi Arabia, Jordan, and Palestine. It is very well known in the Najd region of Saudi Arabia. Hard wheat flour, meat broth, black pepper, cumin, and onion are used in its preparation.

Al-Jareesh Composition.

·         First, tamarind is prepared by adding the recommended amount to a cup of hot water.

·         Then we leave it to soak for about a quarter of an hour and when it cools down we press it by hand until we get unpeeled dates that is tomato paste. Be like, and so ready.

·         Put the fat in a saucepan over medium heat and when it melts, start adding the onion and stir until it wilts, then add the peppercorns.

·         Keep stirring until the onion turns light brown.

·         Then we add the tomato paste and stir for two minutes, then we start adding the ground lime, cinnamon, and cardamom and stir the ingredients together until they are uniform.

·         Then add the tamarind and stir continuously until the ingredients are mixed.

·         Thus, it is ready to serve.
